Awesome,Container kitchen gives artisan cheeses a good grilling



The bright yellow exterior of Austin-based Burro Cheese Kitchen is a dead giveaway of what�s cooking inside.
And in case the colour of the pop-up shipping container cafe isn�t enough, the name spells it out: this place is all about cheese.
Balkan burro cheese (known as pule) is the world�s finest and most expensive cheese.
Made from the milk of Balkan donkeys from Serbia, the cheese fetches up to 1,000 Euros per kilogram.



When Texas-raised Justin Burrow returned to Austin after a stint in Seattle, he was inspired to elevate the art form of the humble grilled cheese sandwich.
And so, in 2013, Burro Cheese Kitchen was born.
Burrow�s dream was to take a basic food item and take it to the next level.
Combining an assortment of quality ingredients � artisan cheeses, great breads and house-made condiments � he developed a unique grilled cheese menu and took it to the streets of Austin with his portable eatery.



The shell of Burrow�s mobile cafe is a recycled shipping container.
Burrow was integral to the refurbishment of the old container.
�After waiting 4 weeks for the rolling chassis to be installed, I rolled up my sleeves and went to work,� he recalls.
�I knew that I wanted to know every part of this eatery inside and out, and hand building it was the only way for me.

�With the help of some amazing family and friends, two months of grinding, welding, cutting, torching, glazing, glass-work and everything else under the construction umbrella, I was able to finally realise the vision and transform the container into a minimal clean lined aesthetic with full glass front serving area.

The goal of elevating the trailer experience was finally there.�



The shipping container cafe is usually parked in Austin�s quirky South Congress neighbourhood, and Burro Cheese Kitchen also offers two mobile food trucks for catering and events.
